With over 15 years' experience in baking, cooking and flavour development, She’s known for combining elevated cake decorating artistry and culinary flavours from around the world, all rooted in the richness of her African heritage.

What began as a passion for feeding people has grown into a full creative house: premium celebration cakes, unforgettable fusion dishes, and digital education for the next generation of bakers. Jen believes "food is a love language, a way to honour memories, celebrate identity, and create moments people carry with them".

She crafts unforgettable cakes and dining experiences for clients. From private events to intimate supper clubs.

Her mission is simple:
To inspire people to create with confidence, connect with people through food, and experience everyday luxury in every bite.
OUAB Existence
We're a London-based Afro-fusion food brand working across catering, luxury cakes and education. Every event, every cake and every box is built around the people receiving it: the guests, the host, the team.

We work as cake artists, caterers, tutors and food creatives — combining elevated baking artistry with confident, modern presentation.
OUAB Existence
Once Upon a Bite exists for one reason:
To make people feel something.

We believe food is a story, a memory passed through hands, spices, techniques, and generations.
We believe luxury doesn’t have to be loud; sometimes it’s soft, intentional, and crafted with care.
We believe culture is a flavour, and it deserves to be celebrated with elegance and pride.
We honour tradition but elevate it.
We teach, not to impress, but to empower.
We create, not to follow trends, but to inspire moments that linger.

Every cake, every dish, every course is infused with skill, love, and the belief that food is how we connect, how we celebrate, how we remember.Once Upon a Bite is where craftsmanship meets culture,
and where every bite tells a story.
What we do/FAQ’s
What catering styles do you offer?
We offer three signature ways to serve your guests, all designed to feel elevated, seamless, and unforgettable: 1. Grazing Tables:
A beautifully styled, self-serve spread of bite-sized canapés and Afro-fusion favourites, perfect for guests to pick, nibble, and mingle. 2. Cocktail-Style Service (Waiter-Passed):
A modern, high-end service style where our waiters serve curated bites and mini meals in cups, bowls, and small plates. Food is served in waves throughout the event, so the experience feels paced, interactive, and effortlessly luxurious. Most importantly, waste is kept to a minimum. 3. Hybrid (Grazing + Cocktail Service):
The best of both: a statement grazing display for guests to enjoy on arrival, followed by waiter-passed bites and mini courses served in waves to keep the energy flowing and guests fully looked after.
When should I book?
The best time to book is as soon as you have your event date. Ideally, we recommend at least 3 weeks’ notice. For larger events, 4–6 weeks is ideal so we can plan, source, and tailor your menu with care.
Last-minute bookings may be possible depending on availability and will incur additional costs.
What if my event is less than a week away?
Because our catering requires detailed preparation and planning, we may not be able to accept requests made less than 10 days of the event. If we can accommodate you, a 10% short-notice fee applies to cover additional sourcing and rush preparation costs. We’ll always be transparent about what’s feasible to best suit your needs.
What is the payment process?
To secure your booking, we require a non-refundable 25% booking fee, with the remaining balance due 7 days before your event.
A refundable damage deposit is also required to cover missing or damaged items (including acrylic units, serveware, or breakages caused by guests): * Events under £1,000: £150 * Events over £1,000: £200
Where are you based?
We’re based in London (South East). If a delivery van is required, an additional £200 applies. Delivery fees may apply based on the venue.
How long does a set up take?
This will depend on the complexity of the design of the table scape and size of the vent, on average this could be anything from 1-3 hours. Early access to the venue on the day of your event is essential. An onsite kitchen is needed for prep and finishing. We’ll also need adequate table space depending on your guest count and chosen menu. If required, we can provide table rental.
Dietary requirements & allergens
Please share dietary requirements and allergies when you enquire. While we take care to accommodate where possible, all items are prepared in environments that may contain nuts, gluten, dairy, and other allergens, and we cannot guarantee a completely allergen-free product due to potential cross-contamination. Full ingredient list and allergens based on your menu can be provided upon request.
Are you insured?
YES. We hold Public Liability Insurance as well as a 5* food hygiene & Safety rating. All staff are trained in food safety and have extensive knowledge of allergens. Proof of insurance etc. can be provided upon request.
Still have questions?
